A weekend post because this is just a weekend kind of thing – breakfast sausage! I’m a huge fan of syrup on any breakfast item. So I knew when I saw these sausage patties at Whole Foods I had to re-create them. To make it a complete breakfast I served it with waffles. Maple Syrup Blueberry Sausage
Adapted from Hail’s Kitchen
-1 pound ground pork
-1/2 cup fresh blueberries (I left mine whole but you can chop)
-4 tablespoons maple syrup
-1 tablespoon thyme, chopped
-1 tablespoon sage, chopped
-1/2 teaspoon black pepper
-1/2 teaspoon salt
-1 teaspoon crushed red pepper flakes
-a dash of garlic salt
1. Mix all ingredients until combined. Form into patties.
2. Spray cooking spray in a non-stick skillet. Fry for 10-15 minutes flipping occasionally. I popped mine in the microwave for 1 minute to ensure they were cooked.
3. Let drain on paper towel for 5 minutes before serving.
*For a shortcut to this recipe you could buy pre-made bulk breakfast sausage (like this) and then mix in blueberries and maple syrup.
