Chocolate Covered Strawberries

I’ve heard from a lot of you that you have been baking up a storm to make the soft cinnamon oatmeal cookies. I wanted to share with you how I took them to dinner at a friends house the other night. I was thinking the plate of cookies needed some color, and who doesn’t love chocolate dipped strawberries? I got some milk chocolate discs from Whole Foods and watched this video to learn about melting chocolate. I used the microwave (I don’t have a double boiler) and as you can see in the bottom right picture, I totally burnt the first batch! I guess chocolate is as tempermental as the women who eat it. I put the next batch in for just about a minute and it was perfect. Then just dip, put on a wire rack, and put in the fridge to set for at least 30 minutes. If I hadn’t burnt the chocolate I was planning on dipping some of the cookies too. I was short on time and obviously chocolate. This was so easy and quick…perfect for the upcoming party season or weekend football gatherings!

Try making your own double boiler. I boil water in a pot, then place a metal bowl on top of it. It works perfectly when I make chocolate covered strawberries for Valentine’s Day 🙂

  4. OK…Now I’m hungry! Delish!
