Recipe: Homemade Baked Chicken Nuggets

-1 lb chicken breasts or tenderloins cut into chunks
-2 tablespoons olive oil
-1/2 cup almond flour
-1/2 cup crushed brown rice puff cereal
-1 teaspoon oregano
-1/4 teaspoon sea salt
-1 tablespoon garlic powder

Preheat oven to 400°F. Cut chicken into nugget size pieces. Brush with olive oil liberally on both sides. Mix seasonings, flour and cereal together in a bowl. Dip nuggets in flour mixture making sure both sides are fully covered. Place on a cookie sheet lined with a silpat or sprayed with cooking spray. Bake for 25 minutes – turning over half way through. Serve with your favorite dipping sauce!
